I Baked a Funfetti Cake Just Because

I love funfetti cake. It was my primary birthday cake request as a kid. I think I heard someone talking about funfetti cake on a cooking show and it reminded me I have free will and I could just buy it and make it instead of waiting the two months until my birthday.

It cost me approximately $2.50 for the cake and an additional $2.50 for the frosting that came with sprinkles at my local grocery store. So right around $5. Not too bad for a couple days of snacks. Also they’re just so cute.

I was contemplating the frostings and whether I should go with regular sprinkles or “unicorn” sprinkles. My husband said obviously I should get the unicorn one. So I did. I don’t regret it. And I do love pink so really it was perfect for me.

I only have one cupcake pan and I didn’t feel like waiting around to bake in two batches. So I thought I’d try baking the rest in this teeny tiny casserole dish.

I received this particular casserole dish from my paternal grandparents as a wedding gift. Apparently they had used it quite a bit and thought it would make a nice gift for me since it’s the perfect size to feed two people. At the time I promptly put it into storage. I didn’t even take it out of the bubble wrap. I thought to myself “It’s so small, what could I possibly make in this?”.

When I was first married I was living with roommates and doing lots of bulk cooking to generate leftovers for my husband and I, and sometimes my roommates, to take to work. I hardly made anything that only fed us for one night.

But now, almost exactly 11 years later, it’s out of storage and I’m making practically everything in it. Turns out my grandparents were right. It is the perfect size for two people. It’s also the perfect size to bake a tiny little cake to have with my dozen cupcakes. Just look at how cute it is.

So I highly recommend just baking a little cake and putting some sprinkles on it to add a little whimsy to life.

Thank goodness for an oven that works.

As always this post is 100% human generated. Love you!
